Sedimentation is the process whereby a solid material transported by a water current is deposited on the ocean or river bed, forming an accumulation.
Technique, uniqueness, reflection, roots and boldness. These are the sediments which define Les Moles, our way of seeing and understanding cuisine and day to day work.
With the #sediments menu we want to reflect the learning process which we have undergone over the last 27 years, where we have accumulated layers and layers of knowledge and materials which have allowed us to form Les Moles as it is today.
The result of this sedimentation is Les Moles in its purest form.
